Where to start? Vegetable Stock Paste
Whether you’ve just got your Thermomix, had it for years, use it every day or only occasionally…there is one thing you absolutely need to cook…VEGETABLE STOCK PASTE!!!!
Thermomix is often referred to as a cult (well if it is, then i’m proud to be part of it)…but I refer to Vegetable Stock Paste as the “cult” ingredient. Just take my word for it…you need it!!!! It can take a dish from drab to fab in an instant. It is jam packed with freshness and flavour and you’ll find it is included in so many Thermomix recipes and if it isn’t….put some in anyway!!!!
When you buy your Thermomix, your consultant (aka…ME) will tell you this is the dish you will make first! Why?? Because it is literally that good. It is a great dish to teach you some Thermomix basics AND get you feeling comfortable with your new fabulous purchase.
Pre-covid, when you bought your Thermomix, it was sent directly to me and I would’ve made a time with you to bring it to you and show you how to use it and together, we would make Vegetable Stock Paste. But now…in the covid world…it more than likely will be sent directly to you. Now…I don’t want you to sit there and stare at your Thermomix waiting for us to coordinate a time to jump on Zoom and cook your stock paste together, I want you to be excited and to get it out of the box and get started! BUT…I 150% recommend you start with the Vegetable Stock Paste!!!

Things to Remember…
Your Vegetable Stock Paste will last in your fridge for 6 months. You can freeze it but you don’t need to (unless you reduce the amount of salt in it…the salt is the preserving agent).
Use it in all sorts of recipes to add some extra flavour (things like pasta sauces, risottos, curries, soups, pretty much anything saucy and savoury). Just throw a teaspoon in and taste the magic.
You don’t need to be restricted by the recipe…you can throw anything in you like. You can even freeze your herbs or some leftover veg from your fridge ready for when you run out of stock.
Remember the ratio 1 tablespoon of Veg Stock Paste to 500g water. So just like you might’ve used stock powder and add water, use your stock paste the same way.
Fun Fact: You could pay over $2 for half a litre of liquid stock from the Supermarket, 1 tbsp of your stock paste when added to water makes half a litre of stock. How many tablespoons could you get out of your batch? I reckon at least 30-40. Times that by $2 per tablespoon and you’re looking at it costing you about $60-$80 worth of liquid stock from the supermarket. It absolutely did NOT cost you that much to make your stock paste. That’s a HUGE saving right there!!!
