Plant-based Basil Pesto

You really can’t beat the freshness of basil. Packed with some nuts, garlic, lemon and nutritional yeast and you’ve got a little dollop of freshness to add to your favourite pasta, salads, and pizza.

Make sure you wash your basil well. I add my leaves freshly washed and that adds that bit of moisture to your pesto so you don’t need to add too much olive oil.

If you wanted it to be a bit saucier, you could add more water or olive oil until you reach your desired consistency.

I like to freeze my pesto in ice cubes and defrost a cube or 2 at a time. That way I’m not opening a jar of pesto in the fridge to discover any mould or that it’s gone off.

Grab a big vibrant bunch of basil next time you’re at the shops and make yourself a batch.
