Souper Saturday - Indian Spiced Sweet Potato Soup & Coconut Yoghurt Flatbreads

Last year my sister bought herself a cookbook with an epic chapter of soups. Her and her family then spent the next 3 months working their way through this chapter by cooking a new soup for lunch every Saturday.

I loved this idea so much that I have been waiting for it to be Soup weather again so I could do it too. Then I thought, why not bring my customers on the Soup adventure with me.

Who doesn’t love a warming soup with some delicious bread (probably too much bread) on a cold winter’s day??

So, I came up with a list of soups and decided each Saturday of winter in 2021 I would make a different soup to share with you all.

Over in my “Exclusive” Customer Group on Facebook we’ve been talking all things soup while we get ready for the first Souper Saturday. We’ve got our fresh batches of Vegetable Stock Paste ready to go and we are all set to begin. I also decided that I would make a YouTube video to go with each soup for Souper Saturday, so that anyone can cook along at their convenience.

The soup we are making first is Indian Spiced Sweet Potato Soup from Cookidoo. It’s so good. Not too spicy. Just the right amount of heat. And perfectly creamy with the addition of some coconut cream.

I was feeling so organised and all set to be a week ahead of the challenge with my videos and resources, when I cooked the soup without pressing record…OOPS!!!! Oh well, it was bloody delicious, so cooking it twice was totally fine.

And what made cooking it twice even better was that I got to make some Coconut Yoghurt Flatbreads twice too. OMG…YUM!!!!!!
