Lentil Bolognese

This dish is one of our absolute favourites. For so many reasons:

  1. It makes heaps. Enough to feed our family twice. Dinner tonight and freeze the rest for an easy dinner another night.

  2. It’s cheap and I can pretty much use whatever vegetables I have in my fridge.

  3. HIDDEN VEG!!!!

  4. It satisfies the carnivore husband. And the fuss pot children. So it’s one EVERYONE eats!!!!

  5. It’s just bloody delicious!!!!!

It’s a great dish to start with if you’re wanting to introduce some meat free dishes into your life because the texture is very similar to a meat bolognese.

Sprinkle it with some Cashew Parmesan and put a big dollop of Plant-Based Basil Pesto on top and I promise you you’ll be super happy.

It also makes a great vegan lasagne.
